This past weekend, I refused to let the close to 90 degree weather deter me and I pulled out my slow cooker to make chili. This recipe is our favorite especially to eat with grilled pepperjack cheese sandwiches.
Ingredients:
1 1/4 pound ground turkey
1 large onion, chopped
1 garlic clove, minced (I use 3)
1 package chili seasoning mix (I use hot)
1 12 oz. can/bottle beer
1 1/2 cups frozen corn kernels (I don't use)
1 red bell pepper, chopped
1 green bell pepper, chopped
1 28 oz can crushed tomatoes
1 15 oz can black beans, drained and rinsed
1 8 oz can tomato sauce (I use 16 oz)
3/4 teaspoon salt
Toppings:
shredded cheddar cheese
finely chopped onion
sliced fresh jalapenos
Directions:
Cook the turkey, chopped onion, garlic clove(s), and chili seasoning together in a skillet over medium-high heat and stir often for approximately 8 minutes or until the turkey meat is no longer pink. Stir in beer and cook 2 minutes, stirring occasionally. Spoon mixture into a 5 1/2 quart slow-cooker; stir in corn, chopped bell peppers, crushed tomatoes, black beans, tomato sauce, and salt until blended. Cover and cook on low for 6 hours. Add toppings.
