Suburb Sunday: Crock-Pot Lasagna

On our inclement weather day, I decided to try a new recipe in the crock pot.

The last time we had snow, my friend Amy made crock pot lasagna.  I found this recipe on Pinterest that was pretty similar and it was so yummy!

Ingredients:
1 lb ground meat (I used turkey)
1 onion, chopped
2 garlic cloves, smashed
1 28 ounce can tomato sauce
1 6 ounce can of tomato paste
1 1/2 tsp salt
1 tsp dry oregano
1 tsp crushed red pepper (I added this)
12 oz cottage cheese (I forget this and it was still so good)
1/2 cup parmesan or asiago cheese, grated (I used asiago)
12 oz lasagna noodles, dry (uncooked)
16 oz mozzarella cheese, shredded

Directions
1. Brown the meat, onion, and garlic in a pan.

2. Add tomato sauce, tomato paste, salt, oregano, crushed red pepper.  Cook together long enough to warm.

3. Spoon a layer of meat sauce into the bottom of the slow cooker.

4. Add a double layer of uncooked lasagna noodles and top with cheeses.  I broke my noodles up to fit in my crock pot.

5. Repeat using the process until all meat sauce is used.

6. Cover and cook on low for 4-5 hours.  I made the mistake and cooked on high.  It was still good, but we ate much earlier than I anticipated.

I will definitely be making this again just with cottage cheese and cooking on low for 4 hours instead of high!
