Rosemary Collins

One of my goals on my winter bucket list was to try out a new recipe.  I saw this recipe in the holiday edition of Southern Living and just had to try it.
Ingredients:
  • 1/4 gin (I used Tanqueray)
  • 2 tablespoons Simple Syrup (see recipe below)
  • 2 tablespoons lemon juice
  • ice
  • club soda
  • garnish: Rosemary sprig
Simple Syrup Recipe:

Combine 1 cup of sugar and 1 cup of water in a saucepan.  Cook over medium heat, stirring contantly, until sugar dissolves.  Bring to a boil.  Boil 15 minutes or until reduced to 3/4 cup.

Directions:

Place gin, Simple Syrup, lemon juice, and ice in a cocktail shaker.  Cover with lid and shake until thoroughly chilled.  Strain into a highball glass filled with ice cubes and finish with club soda.  Garnish with rosemary sprig.
