One of my favorite meals since I was a little girl is poppy seed chicken casserole.
(I borrowed
this image because we dug in before I could remember to take a picture.)
This recipe is so easy to make and it is SO good.
Ingredients:
*1 package chicken breast cooked & cubed (4-5 breasts, or more depending on how many you are cooking for)
*1 8 ounce container of sour cream
*2 tablespoons poppy seeds
*1 can cream of chicken soup
*1 stick of melted margarine
*1 package crumbled crackers ( I used Ritz)
Directions:
Mix cubed chicken, cream of chicken soup, and sour cream together and spread in a casserole dish.
Mix margarine, poppy seeds, and crushed crackers together in a separate bowl. Mix well. Pour on top of chicken mixture.
Cook at 350 degress for 30-35 minutes or until bubbly.
In other news, I am excited to celebrate Friday in my favorite outfit: gray sweater tunic from Ann Taylor, jeans, and my favorite riding boots! Coffee cheers to Friday!
